Cottage Cheese Eggs Ingredients: * 2 Eggs * 2 Tablespoons cottage cheese (Small Curd 4% Milkfat) * 1 Teaspoon Mexican Seasoning Preparation: 1. Spray skillet and use medium heat. 1. Scramble eggs and cottage cheese together in small container, then place in skillet. 2. Sprinkle Mexican Seasoning on eggs (to taste). 3. As eggs begin to harden start folding together, trying to keep wet sides down till done cooking. Serve with or on wheat toast for a great balanced breakfast. Cottage cheese is a complete protein so it is a great protein boost to eggs.
